Roasted Applesauce Cookies


I make a large batch of Roasted Applesauce every other month or so and then freeze it in individual containers to enjoy whenever I am craving it. I prefer roasting my applesauce which I find really intensifies the sweet apple flavor. I decided to bake some cookies with the applesauce this past week, and adapted an old favorite raisin spice cookie recipe to include applesauce.

I then tweaked the recipe further to make it a little healthier by substituting olive oil for the butter, and some whole wheat pastry flour for half the regular all-purpose flour. The cookies turned out great, and I am sure I will be making them often in the future.

Roasted Applesauce Cookies

Roasted Applesauce Cookies

Yield: 1 Dozen
Prep Time: 15 minutes
Cook Time: 15 minutes

Olive oil and applesauce help keep these cookies healthy without sacrificing any of the flavor.

Ingredients

  • 4 Tablespoons Olive Oil
  • 3/4 Cup Brown Sugar
  • 1 Egg
  • 1 Teaspoon Vanilla Extract
  • 1 Cup Roasted Applesauce
  • 3/4 Cup All-purpose Flour
  • 3/4 Cup Whole Wheat Pastry Flour
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Ground Cinnamon
  • Dash of Sea Salt
  • 1/2 Cup raisins
  • 3/4 Cup Chopped Toasted Walnuts

Instructions

  1. Preheat oven to 350 degrees F.
  2. Beat the oil and sugar together until smooth, then add the egg and applesauce.
  3. Mix well.
  4. In a separate bowl, mix together the two flours, baking powder, salt, and cinnamon.
  5. Add the dry ingredients to the applesauce mixture and stir just until blended.
  6. Add the raisins and walnuts and stir to combine.
  7. Use a tablespoon to drop two inch sized balls of dough on to a prepared baking sheet.
  8. Bake the cookies for about 15 minutes or until set and golden brown.
  9. Cool.
  10. Store in a airtight container.
