Zucchini Recipe Roundup

Zucchini is one vegetable that grows like a weed in the garden and then often leaves one wondering what to do with the bounty. Luckily, zucchini is a very versatile vegetable since it has such a mild flavor, and therefore can be used in everything from a breakfast dish to a dessert. Along with the zucchini itself, the zucchini vine grows large golden flowers that can be stuffed, fried, and simply enjoyed in many different ways.

If you are not lucky enough to grow your own zucchini, they are best bought during the summer months. Choose dark, firm zucchini, and in my mind the smaller size is always better as they become bitter as they grow larger. Zucchini can be stored up to three days wrapped in paper towels and stored in the refrigerator. The blossoms are best used the day they are picked.
