Espresso Almond Bites

We arrived back in Umbria Sunday, and I had my kitchen back together within a couple of hours. We have a lovely ceramic cookie jar from Deruta that I keep stocked with cookies for my husband that was sitting empty and needed filling so I got busy yesterday baking cookies.

I usually make some type of biscotti as that is my husband’s cookie of choice, but I decided to try something different and made these unique amaretti type of cookies that are flavored with coffee. Almonds and coffee are a good flavor combination as I’ve learned in the past, so I knew the cookies would be tasty, and in fact they are.

A perfect bite sized treat with a cup of espresso! If the dough is a little sticky when rolling into balls, simply wet your hands with a little water as needed.

Espresso Almond Bites

Espresso Almond Bites

Yield: Makes 24 Cookies
Prep Time: 10 minutes
Cook Time: 20 minutes

A tasty combination of coffee & almonds in a bite sized cookie.

Ingredients

  • 1 Tablespoon Instant Espresso Coffee
  • 3 Teaspoons Boiling Water
  • 3 Cups (or 360 grams) Almond Meal
  • 1 Cup (or 220 grams) Sugar
  • 3 Egg Whites (From Large Eggs), Lightly Beaten
  • Whole Coffee Beans For Garnish

Instructions

  1. Preheat the oven to 350 degrees F. and lightly grease two baking sheets.
  2. In a small bowl, mix the coffee with the water.
  3. In a bowl, mix together the almond meal, coffee, sugar, and egg whites to form a paste.
  4. Roll the mixture into 1 1/2 inch balls and place on the baking sheets, topping each with one espresso bean.
  5. Bake the cookies for 20 minutes or until slightly firm to the touch and golden brown on the bottom.
  6. Cool & store in an airtight container.

    1. You can find almond meal at many grocery stores where you would find flour, at health food stores, or you can make your own by finely pureeing blanched almonds in a food processor.

  1. Hey Deb I was curious can you use almond paste in this or how about grounding my own almond flour? It’s basically just almonds ground up real fine since the stores around my area look at me crazy when I ask for Almond flour.

    I had just tried this recipe of yours I absolutely loved it. I use a chocolate chunk piece instead of the espresso beans since I don’t have any, but it turns out pretty good too. Thanks for sharing your recipe with us.

  3. Perfect-my son’s girlfriend is gluten free so I’ve been searching for recipes like this. Would I be able to use regular brewed espresso instead of instant? I like to use ingredients I have on hand.

    BTW, Trader Joes sells almond meal and it costs much less than most other brands.
